Daniel Mancini - Owner

Daniel Mancini developed a love for food from the time he was a young boy, a passion which has grown into the formation of Castelli Cucina. Daniel began working in the food industry at the age of fourteen, where he worked for thirteen years at a family bakery learning the art of breads, pastries and cooking. During this time, Daniel worked one on one with his father, Dino, and his two uncles, Lidio and Pat, all of whom have had a profound impact on him and his knowledge of preparing food and delivering quality service to customers.

‘Family First’ is Daniel’s number one motto and as a result, some of his fondest memories come from Sunday night dinners, spent around the large dinner table, surrounded by love, and laughter. Food was always at the center of all of these family gatherings which led Daniel to spend much of his free time learning and creating traditional Italian dishes with his Nonna Linda and Nonna Concentina. From learning how to make pasta the real way ‘FATTO a mano’, to preparing the perfect pot of sugo, he learned the fundamentals of authentic Italian cooking.

Daniel also spent time travelling to Italy to discover local dishes and perfect wine pairings. Some of Daniel’s other accomplishments include: completing his Red Seal program at Niagara College, bee keeping for Mancini’s Honey, catering several private events, and mentoring numerous baking and chef apprentices. All of these experiences are what lead Daniel to be inspired to develop a restaurant in his hometown of Hamilton that encapsulates traditional Italian flavours, fresh ingredients, attention to craftsmanship and a heartfelt family atmosphere. Castelli Cucina is a place to celebrate friends and family, good company, and great food.
